Lisa and I prep a borderline NSFW - but definitely safe (and delicious) for consumption #goodnightsnack - Lemon Cashew Balls. Can't find a great on-the-go or late-night snack to satisfy your hunger for something good? Try this recipe on for size.
NOTE: Cinnamon & corny jokes, optional.
Ingredients:
Remember: Organic is best!
2 cups raw cashews
1/2 cup coconut butter
1/2 lemon, freshly squeezed (more to taste)
1/8 cup coconut flour or almond flour
1/4 cup unsweetened shredded coconut
1 Tbsp raw honey
Pinch sea salt
Optional: add cacao nibs or cinnamon to taste
Directions:
Combine all ingredients into a medium sized bowl
Gently mix
Pour and scrape into food processor
Process until the mixture sticks together
Hand roll into bite-sized balls
Store in refrigerator for at least 30 minutes
