Lani Nishiyama of "Americas Got Taste" joins Jason Daley Kennedy for a brand new episode of Goodnight Snack. We did this episode on Zoom, which was a fun stretch. The good food before you say goodnight is all about chocolate dipped fruit, and we've made the episode as sweet and salty as this traditional aphrodisiac.

Chocolate Dipped Strawberries with Macadamia Nuts

NOTE: I substituted pineapple, which was OK, but strawberries are the way to go.
I shoulda listened to Lani!

DIRECTIONS

  • Heat about 2 inches of water in a saucepan on medium heat till it simmers.  Turn off the heat.

  • Place the chocolate in a heatproof medium bowl and set the bowl over the hot water in the saucepan and stir until melted and smooth - you could do this in the microwave as well!  

  • Remove the chocolate from heat and line a baking sheet with parchment paper

  • Hold the stems of the strawberries and start dipping to your heats content!

INGREDIENTS

  • 20 oz. or about 12 strawberries

  • About 8 oz. or little more than half the bag of chocolate chips (either milk or dark)

  • Your nut of choice, crushed

Oh NUTS!

Lisa and I prep a borderline NSFW - but definitely safe (and delicious) for consumption #goodnightsnack - Lemon Cashew Balls. Can't find a great on-the-go or late-night snack to satisfy your hunger for something good? Try this recipe on for size. 

NOTE: Cinnamon & corny jokes, optional. 

 
 
 

Ingredients:

Remember: Organic is best!

  • 2 cups raw cashews

  • 1/2 cup coconut butter

  • 1/2 lemon, freshly squeezed (more to taste)

  • 1/8 cup coconut flour or almond flour

  • 1/4 cup unsweetened shredded coconut

  • 1 Tbsp raw honey

  • Pinch sea salt

Optional: add cacao nibs or cinnamon to taste

Directions:

  1. Combine all ingredients into a medium sized bowl

  2. Gently mix

  3. Pour and scrape into food processor

  4. Process until the mixture sticks together

  5. Hand roll into bite-sized balls

  6. Store in refrigerator for at least 30 minutes

  7. Have a ball with this #goodnightsnack

 
Get Fat Before Bed

At the risk of sounding Mean Girls, this late night snack is actually filled with healthy fat that is GOOD for you. Counterintuitive? Yea. But GoodnightSnack Resident Nutritionist Lisa Kara of Zinc Nutrition says healthy fat is actually a great late night snack. So get you some fat with these back wrapped avocado, ready in just 15 minutes. 

 
 
 

Ingredients:

  • 1 Medium, Ripe Organic Avocado

  • 6 Strips Organic, Full-Fat Bacon

  • Trust

Directions:

  1. Preheat oven to 375.  

  2. Line baking sheet with parchment paper or foil.  

  3. Stretch bacon strips so they become a thin “rope.”  

  4. Cut in half and set aside.

  5. Cut the avocado in half, remove the pit, remove the skin, cut into slices (use the OXO Slicer!).  

  6. Wrap each slice in one piece of stretched bacon.  

  7. Place bacon wrapped avocado slices on lined baking sheet.  

  8. Bake for approximately 15 minutes until bacon is crunchy.  Cool and enjoy!

How to Punk Your Family with Healthy Punkin Pie

Tastes so good they'll never know it's good for them.

*Licking the bowl optional.

 

Ingredients:

  • 1 Can Organic Unsweetened Pumpkin

  • 2 Scoops Vital Proteins Gelatin

  • 2 Tbsp Coconut Oil, melted

  • 2 Tbsp Organic Grade A All Natural Maple Syrup

  • 1 - 2 Tbsp pumpkin pie spice

NOTE: Double this recipe for more than 4 people or if you want to fill a 9" pie pan.

Directions:

  1. Lightly grease a standard 9x5 bread pan (or 9" round pie pan) with coconut oil, set aside

  2. Place all ingredients in a mixing bowl, blend with a whisk or hand held blender until well incorporated

  3. Pour batter into bread pan or round Refrigerate for at least one hour until firm

  4. Serve with all natural whipped coconut cream* and a few shakes of cinnamon

*coconut cream - simply whip full fat coconut cream with a hand mixer until you reach a consistency of whipped cream

Let Them Eat Ice Cream

Ice cream is one of the most common late night cravings. But staying-in-shape is one of lives all-time cravings. Swap this N-ICE Cream for your trusted night-time pint.

What makes it nice (and thus good)?: its made with 3 simple ingredients that calm your body instead of traditional ice cream treats that cause digestive problems and blood sugar disorder.  Ewwwwwwww.

  • 2 Tbsp Almond Butter

  • 1 Tbsp Cocoa Powder

Directions:

  1. Blend all ingredients in a mini food processor until it reaches the consistency of soft serve.

  2. Top with coconut, nuts, berries, cocoa nibs, get creative!

  • 1/2 avocado, mashed

Sweet Ingredients:

  • 1 large organic apple

  • 1 tbsp nut butter

  • 1/2 tsp Cocoa Nibs

Directions:

  1. Cut apple sideways into round disks, remove seeds

  2. Top half with avocado + dash of sea salt

  3. Top half with nut butter + cocoa nibs

  4. Enjoy!
